Baked Mooncakes – A Taste of Nostalgia
When people think of Mid-Autumn, baked mooncakes often come to mind — golden-brown crusts, flavorful fillings, and the inviting aroma filling the home. These mooncakes are usually prepared a few days before the festival so the crust has time to soften and blend with the filling. For many, it’s the flavor of childhood and the joy of gathering around fresh-baked cakes with loved ones.

Ingredients:
- Dough: 300g flour, 210g golden syrup, 60g cooking oil, 1 tsp alkaline water.
- Filling: assorted (Chinese sausage, melon seeds, sesame, candied fruit…) or sweet (mung bean, lotus paste, matcha, salted egg yolk).
Method:
- Mix golden syrup, oil, alkaline water; gradually add flour until smooth dough forms. Wrap and let rest for 30 minutes.
- Divide dough and filling (2:8 ratio). Wrap filling with dough.
- Press into molds for desired shape.
- Bake at 180°C. After 10 minutes, remove, mist lightly with water, let cool, then repeat baking 2–3 times, brushing with egg wash each time.
Result: Golden-brown mooncakes with rich aroma and softening crust that improves with time.
Snow Skin Mooncakes – Gentle and Refreshing Like Autumn Moonlight
If baked mooncakes evoke nostalgia, snow skin mooncakes bring freshness and elegance. With their soft white skin, lightly scented with pomelo blossom, they offer a sweet and gentle flavor. These are often enjoyed immediately after making, simple yet beloved for their purity and charm.

Ingredients:
- Dough: 300g roasted glutinous rice flour, 200g syrup, 20g cooking oil, a few drops of pomelo blossom essence.
- Filling: mung bean paste, lotus paste, or black sesame.
Method:
- Mix roasted glutinous flour with syrup and oil until smooth.
- Wrap filling with dough and shape into a ball.
- Press into molds for decorative patterns.
Result: Soft, delicate mooncakes with a light floral aroma and balanced sweetness.
Pairing Mooncakes with Tea
Because mooncakes are rich and sweet, tea is the perfect companion to balance flavors:
- Lotus tea: refreshing and gentle, pairs beautifully with savory baked mooncakes.
- Jasmine or green tea: slightly bitter notes complement the sweetness of snow skin mooncakes.
- Oolong tea: aromatic and robust, ideal with mung bean, matcha, or lotus fillings.
The secret is to enjoy small bites of mooncake with sips of warm tea, letting sweet and bitter notes blend together for a cozy, soothing experience under the full moon.
